Carnaroli rice, celery root, shallots, Parma prosciutto, Italian butter and homemade Amish chicken sausage, Perigord truffles.

 

SOGLIOLA ALLA MUGNAIA

English Channel Dover sole, flour, clarified butter, lemon juice, parsley, round potatoes, black trumpet mushrooms.

 

FRACOSTA ALLA MODA

Grass fed beef 45 days dry aged rib eye, roasted with cognac, white wine, herbs, pearl onions, Parma prosciutto and carrots. Served with purple potatoes gnocchi au gratin.
