InspirationBeing a valiant innovator herself, Chef Luisa Silvia is often attracted to momentous figures when she surveys Italian history. This week she found Lucius Licinius Lucullus, a masterful general who led a legion into the eastern climes (then vast and unknown) during the late Roman Republic, just a few decades before Christ, and orchestrated one successful conquest after another. Lucullus augmented his reputation in Rome with a series of astounding contributions to aquaculture, gastronomy, husbandry, and the arts. He introduced new varieties of fruits and vegetables, for example, which he’d appropriated from exotic terrains abroad, by having them featured at his lavish banquets.
And this weekend Chef Silvia would like to introduce you to one of Lucullus’s favorite recipes, Timballo di maccheroni alla Lucullo, at our perennial banquet.
Homemade macaroni tossed with a light mornay sauce, sautéed foie gras (A-grade, diced), local morels, shaved Gruyere, and fresh black truffles. Finished in the oven “au gratin.”
