In the northern Nunavut region of Canada, summer is brief and the Nunavut arctic char swim back home after feeding in the northwestern passage to spend the winter under the ice. Based out of Cambridge Bay, 1,500 Inuit fishermen capture these beautiful wild animals for the pleasure of gourmet people spread all over the world. Luisa Silvia loves to offer her customers the most sophisticated ingredients available. This weekend she has prepared home-made pasta that will blend with this unique breed of fish.
Home-made semolina flower spaghetti, yolk of eggs and squid ink. The carbonara is made with seared tiger shrimp and arctic char, drizzled with sauvignon blanc Russiz Superiore wine, presented with steel head caviar on top.
