In Costa Rica, a dozen of lucky, small companies grow a variety of small shrimp called “laughing birds shrimp” taking advantage of a program supported by their Country that is intended to maintain the pure lagoon water.  The lagoons are checked quarterly, while shrimp grow without hormones, antibiotics and preservatives and reach an incredible level of sweetness that has surprised our Chef Luisa Silvia.  For these reasons we chose this recipe which you will be able to taste as our special this weekend in our restaurant.

Extruded rigati are made with a mix of semola flour, eggs and lemon zest.  Diced fresh tomatoes, basil, garlic, coarse salt, Pecorino cheese, almonds and Extra Virgin Olive Oil make the Pesto Trapanese.  Crispy eggplant is combined with rigati al dente and Pesto Trapanese. The preparation will be complete with a handful of “laughing birds shrimp” which have been very lighted fried in Extra Virgin Olive Oil.
