We shall people the pasta kingdom with a species of ravioli that embodies this very dynamism, contours that plunge and bound, a robust core of guinea fowl meat and sweetbreads, crests of white truffles…

Ravioli di faraona con la cresta e tartufo bianco begins with egg yolk dough, from which is forged ravioli in the shape of rooster crests. The pasta is filled with guinea fowl meat, sweetbreads, Parmigiano Reggiano, marjoram and parsley cooked in hen broth. It’s tossed with clarified butter and then showered with white truffles from Alba.
