Bistecca alla Piemontese (Piemonte style rib eye)

Succulent organic rib eye overspread with chopped piopinni mushrooms, flavorous Perigord truffles, garlic, parsley, lemon. Coated with remoulade, Parmigiano-Reggiano, and fresh breadcrumbs. Slowly sautéed in clarified butter. Finally accompanied by a “sformatino” of cardones, paradisal Fontina della Valle d’Aosta, Perigord truffles, roasted potatoes, and buttered peas.
