Tableside conversations around Merlo have been becoming more gastronomic.

Chef Luisa Silvia found herself pulled into one such culinary colloquy, at random, this week.

It was a Sicilian woman visiting her Chicagoan friends (they’d all been talking about the intersection of culture and cuisine). She became more and more inspired by Merlo’s fare as she partook of it. Her mind bloomed with youthful memories like a prelapsarian garden as she discussed the food with Chef Silvia. Finally assured that Chef Silvia is indeed an old spirit, a sister of the nutritive soul, if you will, this woman decided to divulge an heirloom (no, not the tomato variety) recipe from her island.

So this weekend, to honor her and all of you who’ve taken such an interest in culinary art, Chef Luisa Silvia will present a very intimate recipe.

Stinco di maiale con miele e arancia begins with a free-range pork shank, which is marinated with star anise, cardamom, cloves, orange juice, honey, and white wine. It’s then slow roasted and brushed with honey all throughout that process. Finally served with Sicilian-style grilled porcini, caramelized figs, and roasted potatoes.
