Luisa Silvia’s culinary journey started in childhood when she would assist her grandmother and mother in preparing complex, classic Bolognese recipes interpreted from handwritten notes that had been passed down through the generations.
Luisa Silvia experienced a major modernization of Northern Italian cuisine during the ’70s and ’80s, as she was growing and refining her own cooking techniques.
In 2002, Luisa Silvia brought her gastronomic mastery to Chicago via Merló. Gourmets and food lovers alike have been enjoying authentic Italian recipes composed of imported, top-quality ingredients in her restaurant ever since.
The old book shown in this photo is her grandmother’s collection of recipes. Decades of practice and refinement went into its creation, and it’s what has made Silvia into the chef she is today.
