Alba is a small area in Piedmont producing white truffles that are very well known throughout the world for their incomparable taste. The fortunate Piedmont inhabitants have produced many recipes to enjoy this gift of nature. The best of these recipes is the lasagna the local families prepare for the holidays that inspired Silvia to create this weekend special
The pasta is prepared combining “00” flour with organic chicken egg yolks and white wine. The ragout is prepared with veal meat, Prosciutto di Parma, cognac and milk. The layers are composed of eggs yolk from quail eggs, morel mushrooms “trifolati”, salsa mornay along with white truffle inside and on top. Everything is then assembled and lightly baked in the oven.
