InspirationThe cobalt ports of the Pacific Northwest harbor one of the most prized breeds of Dungeness crab in the world.
So when these lush crustaceans were presented to the ever fertile mind of our seasoned chef, Luisa Silvia, by one of her purveyors this week, she was instantly reminded of one of her favorite seafood dishes in Italy: Spaghettini nella granseola. And thus began her preparations for this weekend’s special.
Spaghettini nella granseola consists of spaghettini (from semolina rimacinata, twice-grounded) tossed with Pacific Northwestern Dungeness crab meat, spring onions, grape tomatoes, basil, and cognac.
