Each year, the Ministry of Cultural Heritage in Rome organizes a series of events that focus on “theater and Roman gastronomy.” A head chef is commissioned to create a delectable dish inspired by the performances he or she observes.

Taking her cue from this festive process, Chef Luisa Silvia has decided to create a weekend special influenced by her multiple readings of the famous collection Arabian Nights (specifically the exchange that transpires between Abu Kir the Dyer and Abu Sir the Barber).

Carbonara di Mare consists of homemade semolina-spaghetti prepared with a bronze dye, which is sautéed with extra virgin olive oil, mullet bottarga (a highly prized roe dating all the way back to Phonecian times, which was spread as a commodity throughout Arabic societies), and a hint of garlic. It’s finished with whipped egg yolks and Parmigiano Reggiano.
