Luisa Silvia favors every unique ingredient she can find. Today her focus is on “Inuit” people who for four weeks a year cut holes in the ice to catch the uniquely flavored Arctic char for the pleasure of every fish lover. Her culinary experience will add the final touch making this plate a must try.
We start cleaning the whole fish and then create fillets and spread thyme, rosemary, dill and garlic on the meat side then we cover it with a combination of shredded almonds, zucchini and pink pepper. All goes in the oven drizzled with vodka, served and accompanied with purple potatoes mousse and a caramelized lemon quat.
