Many Northern Italian cookbooks attest to turkey being used in elaborate recipes as far back at the early nineteenth century. One such preparation is Tacchino tartufato alla reale, which Chef Luisa Silvia will be recreating for her distinguished Thanksgivians.

Deboned, organic turkey stuffed with veal, foie gras, prosciutto, Parmigiano, pistachios, cognac-sautéed chestnuts, and whole black truffles, which is oven roasted with herbs, vegetables, and Marsala.  Served sliced with its own reduction.
